One of my favorite videos I have ever made. A harvest video from the garden and what one of Masanobu Fukuokas mot popular quote means to me at this stage of my life. Shalom

  1. Here's my favorite recipe for zucchini.
    Vegetable Birds Nests
    1 pound veggies- zucchini, carrots, cabbage, kale, onion, etc
    1/2 cup flour
    1/2 tsp baking powder
    1 egg

    Grate the zucchini with a cheese grater, toss with a tsp of salt, let sit 10 minutes, then put it in a sieve and smash the excess water out with a wooden spoon.

    Make thin strips of the carrots with a vegetable peeler, or make long julienned strips

    Cut a few leaves of kale into thin strips, or cabbage

    Add a bit of diced or thinly sliced onion

    Toss all the veggies together in a big bowl.  Mix the flour and baking powder together, then toss that with the veggies.  Beat the egg and then toss that with the veggies.

    Heat some oil in a large skillet.  Make a loose "nest" of veggies with your fingers, and drop them into the hot oil. Brown on each side until crisp.  Serve with soy sauce. 

    Delicious and versatile, just weigh your veggies at the beginning, and adjust the amount of flour and eggs to make the size batch you need.  You can keep the leftovers in the freezer and reheat in the oven.

    I'm pretty sure that C. Pepo doesn't cross with C. Maxima so you have something else happening with your squash.
