OK…we did the tater tot casserole in the cast iron skillet two nights ago (but with PLENTY of onions!) and it was WONDERFUL!! We had the left overs tonight along with some boiled okra, fresh frozen from our garden (Itsy Farm) last summer. We were worried that it might not be as good after overnighting in the refrigerator, but it was JUST AS GOOD! Thanks for a great recipe from you (and your friend).
I totally love this recipe! I add rotel to it and do it in the crockpot (after browning the meat) and it's insanely delish!!!

BTW, is there any chance that you would be willing to do a video on the pros and cons of cooking with cast iron pots and pans vs modern? Also, how to use, clean, and care for them? It seems like such a mystery to me.

Now that the weather is starting to cool here in PA, I'm making this for my family this weekend.
Instead of tots we use noodles called brown junk!! Haha
That could work well with home fries instead of tater tots too!!!

I always add a can of Veg-All when I make this. That's how my mom and Grandma always made it when I was growing up. Sneaky way to get us kids to eat our vegetables, haha. My grandma would sometimes go "fancy" and add the pearl onions to it too.
Wonder how this would taste with sausage instead of beef. Got lots of sausage from our pigs, lol.

used cream of BACON and 6 pieces of thick cooked bacon diced. once done top with more cheese and more Bacon bits. yummy. also made a few mini cast iron skillet version too
