  1. Kim chi spices and grated seasonings should be stuffed between layers of cabbage leaves than put into jar and best eaten fresh before even fermentation.

  4. Greetings…when talking about 'Enzymes" concerning Produce (fruit/Vegetables/Meat)…does not cooking in heat kill the Enzymes that are so important for us? Don't high cooking temperatures, destroy these healthy Enzymes we need for our Gut/Digestive system to assist and alleviate the Pancreas, and build the immune system within? Any correspondence from the comments is welcome, as I don't wish to mislead anyone, I'm interested to see if I'm close to the truth. I do like this channel and their is some helpful knowledge. ps…I know very little about Dehydrators…I'm more talking about boiling/ovens/saucepan/frypan cooking. The health of our body is more aligned with "Raw and Fermented" food (I hope I'm right in saying this?). I thank you.
