Plant lavender or rosemary amongst the trees. They flower at the same time as the trees and they attract a lot of bees.
Can Corn ne grown in a food forest? I have not seen anyone doing corn.

I used to live in the South and had a problem with plum curculio each year. From what I understand, if you have chickens, which you do, you can shake the tree, as you mentioned, with the chickens around and they love those little beetles as they fall after the vigorous shake. Might be worth a try if you can permit the chickens under the apricot, peach or plum trees. Keep up your great work, as many people have said, you're an inspiration =:^)
