In the fourth class of our “Essentials of Cooking” series, we will cover the use of acid in cooking delicious cuisine. From citrus to vinegar to cultured products, acids are often the number one component home cooks lack knowledge of that can bring flavor to the next level.
Cook and farmer Pat Battle along with author and cook Meredith Leigh will cover the science of acids in food, sources for healthful acids in cooking, and practical applications for the home cook.
I was thinking about a different kind of acid, but this was really cool too.
I know this series is based on the same ideas that that Salt Fat Acid Heat book is based on but I love the idea of a cooking series based on the different categories of flavors anf Pat Battle's interest in bitters makes me want to categorize his video on brassicas in with this Essentials of Cooking web series, in order to include bitters. My family and I love winter squash and I never thought to steam it in an acid. I can't wait to cook it in a different way, this concept will blow my family's minds.
