In India we sat on the temple floor and ate our food off banana leaves, they make very good plates too. And they also work as sandwich wrapping, and steaming things in banana leaves gies a very good flavour too. #thenutritionhealer
Your snake beans: Are actually called snake gourd. You can have it in stir fry while it is still green. Red /orange ones are used for seed keeping

Have you tried drying the whole pod? If not for eating, could be fun dried decor! Especially if they can keep any color or nice shape!
Snake beans wow
The snake beans look more like a squash. A winter squash or melons like pumpkin, acorn, butternut with the stringy stuff. They just don't have the thick skin amd meatiness of those things.
How is the flavor + texture of the snake bean when green? I think that's when most are eating it–as a green bean kind of veggie.

Hey Jesse, Snake beans are clearly related to Bitter Melon. Bitter Melon seeds taste like cherry candy. Just the slime coating around the seeds. Try some of the Snake Beans in curry when they are 10-12 inches long.
I am surprised that you don't grow parsnips in your root vegetables. Turga is my go to variety as the seeds remain viable for 2 years, all other varieties are only viable for 1 year.
