TatSoi is my new favorite vegetable. Tastes delicious, and I can use it in any of my recipes that call for spinach, cabbage, or kale. It provides my daily vitamins, more calcium than milk, more vitamin C than orange juice. It grew all winter through the snow and gave me fresh greens every day. It even survived our worst ice storm in 11 years. In the spring, it surprised me with bright yellow flowers even before the daffodils bloomed.
