A bit late in commenting, but I've only recently come across this excellent channel. Red Vein Sorrell may grow super duper fast, but at my place the possums eat it faster than it can grow!
Try sweet potatoes. You can stir fry the leaves with chopped garlic.
Good ideas of planting vegetables on raised garden beds prevents soil erosion during heavy rains especially in a bit slope areas
Pea shoots have become my favorite green veggie since I started gardening. I plant a bunch to harvest just for greens. They have almost a nutty flavor that's mild and unique. Makes sense because they're a legume.
I love beet tops, too! Beet tops are far faster to grow than spinach for greens and taste/cook up very similar.

Dandelion is a very tasty spring green that most people feel is a weed and try to kill them in their lawns, as they get bigger yes they do get bitter tasting but then the flowers can be made into wine dandelion is an old time traditional food at least here in central Pennsylvania.

Too many people underrate the tops of root veggies like beets, carrots and so on, when they are often the most amazing part of the veggie!
The carrot top greens go great in a pesto as well!

Mother of hundreds or Dagremontian kalanchoe is a plant which is edible but unfortunately it is ignored by people who grow it. I have one big plant in the backyard and it spreads seeds anywhere, it's difficult to eradicate, but it has beautiful flowers during the winter. It's a weed and a edible plant. The edible part are the leaves with the skin removed, they are a bit sour but its still good for for health, it's even used as medicine in Africa and South America. Great day to wish for you

Pea leaves are a Chinese green. Its good.
As soon as I neglect my garden it gets smothered with grass. Really hard to get rid of by hand so I’m excited to see this one 🙂
I tried growing the Parisian carrots this year abut they didn’t grow literally at all except one teeny tiny one and I think it was because I grew them in the middle of our hot Texas summer
