I have sweet potatoes growing in my kitchen. I left 2 on the counter for too long apparently because they're trying to be air plants lol.
Not sure what I'm going to do with it now. My whole yard is fill sand to a depth of about 3 feet.

I’ve had better results with kennebec if you leave them until the plants are completely dead. All the same, those small kennebec potatoes are delicious. Real butter, salt, pepper, fresh dill.
My grandpa when he planted potatoes he cut eyes off an plant right on to ground with 6 in pinestraw

You really must try Ruth Stout method for potatoes. So much easier.

Does pulling them when the plant is still green reduce their shelf life?
You can cut small pieces of potatoes so don’t have to use full potatoes. Even from peels you can grow and get potatoes
Is there a list of varieties with attributes, including whether they are determinate or not. I haven't found one yet.

This years potatoes had a difficult time forming flowers, and my harvest was bitter/sour. Any thoughts on why that happened?

@3:18 Potatoes do not make arsenic. Green potato skins contain excess solanine and chaconine.

How tall are your potato plants on average? I planted 4 seed potatoes / square feet hoping to use their foliage to shield out the sun but they're about 30 inches above ground and any rain storm causes them to fall over. Is that normal?

Is the soil in Michigan soft? I have been to Michigan but that was years ago and I didn't check the soil out. Went to Detroit, the UP, Alpena and other places.
Here in the Southwest in Los Angeles the soil is as hard as a rock. Not quite but close. So either dig a hole and fill with good soil or grow in a container with potting soil.
