Whattttt…I can’t believe you’ve only been gardening one year. I save tomato seeds the exact same way. I’m not sure about the mold (I dry mine out really well before putting away) but in my experience seeds saved that way germinate just great. In fact I have better success with my own saved seeds than store bought. I do this every year.

I save seeds from my biggest tomatoes. I plant as many as I have room to keep indoors and give extras away to neighbors, friends, and family.
Did you save seeds from Sungold,
Sungold is an F1 tomato, so if you save the seed and plant it, you will not the Sungold, but you will get a tomato to grow, but who knows what it will look like or taste.
Is there any concern about cross pollination?
Saving tomato seeds you should put the seeds in water the viable seeds will sink and the bad seeds will float. Check out roots and refuge with Jess and Maih, garden state with Mark on you tube.
Some seed producers ferment seeds to get rid of the slimy coating that supposed to hinder germination. Your idea looks ok, us amateurs don't need 100% germination. Me I just pop seeds and gloop into a sieve, wash under a tap, using my knuckles to rub the coating off, dry on grease proof paper on a sunny windowsill and packet up when dry.
I’ve never seen this technique before. Can’t wait to see how it works for you.
