I also watched the Rotten series. Wasn't motivated enough to grow my own garlic but we don't buy garlic imported from China and we certainly don't buy the ready pealed and/or minced garlic. Maybe you have inspired me to grow our own garlic this year? Fingers crossed the energy is there at the end of this growing season to do so. Thank you!

Blend your celery leaves with some celery seed and salt and then you have homemade celery salt
I store all my Dried Milk powder, buttermilk powder, nuts and yeast in the freezer. Nuts have oils in them that can go rancid. The yeast will last for years in the freezer! It is like the freezer puts it to sleep- I buy it in bulk and no lie- when the pandemic hit- I was able to share yeast with all my neighbors that wanted to bake because I had it in bulk- and it was still good- from 2014!
What alternative ways can you use to dry herbs?
I'm really interested in making my own "spice mixes"….how do you do your taco seasoning mix? And are there others that you do as well?
May I ask, why only to the store once a month? Do you live in a remote area?

GIRL…I am so validated after hearing your frustration about the tablespoon! My husband gets a kick out of me yelling in the kitchen because I have that same struggle. While I cook and bake I don’t think I’d use enough spice in a year to bulk buy. Because doesn’t it loose it’s “spiceness” after a year?
For the coriander seeds. Try roasting some in a dry pan ( without oil ) and ground them for use. It gives another dimension of flavor it’s amazing

I stopped using that baking soda as it contains aluminum. Not good for healthy cell reproduction in human bodies. They also put aluminum in certain flour. So I only get all purpose flour now.

Do you have any recipes or videos that show how you use the dried leeks? I absolutely love leeks and generally store mine in the freezer. Freezer space is a high commodity though and I'd love to be able to transition more things to the pantry. Do you have to rehydrate your leeks before you use them?

Every video I watch gives me a bit of information. I might not have a homestead but I'm getting a better – healthier – pantry and spice cabinet by watching your videos. Right now I don't have a garden and probably won't until after I retire but I can get better quality products right now. Also, love Penzey's, despite the small jars. I just dump stuff in the palm of my hand to get an approximate measurement.
I'm quite nervous about cutting myself on a hand-held nutmeg grater. On YouTube I found a video about how to grind nutmeg safely: First, break up the whole nutmeg in a mortar and pestle and second, grind these coarser pieces in an electric grinder (which I already have) until they're a fine powder. This sounds very safe.
I've accidentally grated my knuckles once and it's very painful.
