I to perfer jam or peanut butter than syrup on pancakes and waffles. The jam looks great.
If you don’t want to add sugar , you can buy Pomona’s universal Pectin on Amazon . That one does not need sugar to work.

Have you ever considered using wax for sealing your jams so you can save your lids for pickling?

I love this video! One suggestion: maybe when you can something like jam or relish, and you have a bit extra you put in the fridge, perhaps put a little clip at the end, showing you spreading it on toast or just showing the consistency, and giving it a taste. It ups the satisfaction for the viewer to really see the end product in action. Of course this won't work when you have a major canning day with multiple recipes, but at the end of this video I kept thinking "I wonder what it looks like fully jelled? I wonder if she was satisfied with the flavor?"

A roiling boil sounds like a very angry boil. I think it's a step up from rolling boil.
Just a small piece of advice. The Ball Canning book says to take your jars out of the canner and let sit untouched for 24 hours. Then you can mark on the lid and take your ring off. I’ve never done the low sugar recipe but since I find jam almost sickening sweet, I am going to try that!
