If you have a root cellar, wrap the apple in loose news paper/brown unwaxed paper and on flat trays and store. Check for spoilage regularly. No need for refrigeration….. don't store with onions, garlic or potatoes
The larger apple sounds and looks like a cooking apple variety, like bramley, the other smaller is a desert snack apple like a gala.
A Italian grandma swears by putting an old duvet or sleeping bag over the jars once they came out of the waterbath and leave to cool over night. She swears she never had a jar break since.

What brand of apple peeler/corer/slicer are you using? I’m thinking about purchasing one but all the demos I have watched don’t do a very good job of peeling the apple (either leaves a lot of skin on the top or bottom parts or it cuts too deep)
I usually put a dish rag around the counter before I screw in the peeler. I wore off part of my counter top one year. Yikes!

Very interesting video! The sound quality is so much better, too. I didn’t know how easy it was to make vinegar. Now I want to make it! I’ve done lots of canning before, but never with this much produce at one time! I was in awe!!
Do you wash the apples before you process them? Or does the juicer get hot enough that it doesn’t matter?
When making your vinegar and cider, do you not need to wash your apples first? Are your apples organic?

A way to speed up the peeling process is to remove the handle from the peeler and attach a cordless drill. Game changer
I'd be interested to see what happens to the flavor of the apple juice if it's reduced. I may have to get a steam juicer! That looks like fun!

Would you please show your apple peeler from end to end close up. I'm searching for one like yours. Bought one at a thrift store yesterday. It's worthless. Chews half the apple away, and doesn't follow the contour of the fruit. Plus the part that cores the fruit won't line up with the spindle. It's awful. Please, please show close up of your peeler!
