  1. That sounds like the best lasagna ever! My dream lasagna would be pasta made from homegrown wheat (at least home milled), sauce from homegrown tomatoes and herbs, meat from home raised animals, and cheese from home raised milk. I look forward to the day I can make meals like this from food grown steps away from the house.

  2. Oh goodness, love making cheese, ricotta, creme de leite or queijo fresco, or long cured cheese.. Hmm.. All is made the same way just different techniques..

  3. The chickens always welcome some warm milk on a cold winter day. I always keep chickens, guineas and occassionally pigs that help eat extra food from the garden and leftovers from the house. The nice thing about a farm is that nothing really goes to waste.

  4. When we were raising goats I like to make cream cheese. Is making ricotta the same as making cottage cheese or do you leave more moisture in it for cottage cheese?

  5. I would love to try this! I guess I’ll have to research where to find the right kind of milk. About much cheese will a gallon make? How long will it keep in the refrigerator? Tablas as always for the inspiration!

  6. Oh, the topic of those childhood meals from difficult times that you just can't bring yourself to eat again definitely brings up some memories in my family. My mother will not eat a turnip. She grew up in extreme poverty and the family relied on the garden to feed them. By the end of winter all that would be left in the pantry were potatoes and turnips, and they would eat them for every single meal. Her discussions about her childhood have certainly motivated me to try to work toward both diversifying what I can grow and preserve as well as extending the growing season on both ends as much as I can.
