I have tried to make Hachiya persimmon jam, but something has soured the batch in all but one time. My only success at canning was using Pomona Pectin. I'm afraid to make a persimmon pie in case after all that cooking, it turns sour. I have consistent success drying them. The fully ripe persimmons can't be dried, but the nearly ripe persimmons can be sliced; then the dryer develops the sugars. Dried persimmon is delicious and a great snack. I make a puree of fully ripe persimmons and freeze it. Don't use a food processor to puree because too much agitation can cause it to sour. What do you do with all those Hachiya persimmons once you are sick of eating them?
Can you graft a non-astringent persimmon on to an astringent variety?

Amazed your Persimmon haven't been eaten. My tree is ravaged entirely by Rainbow Lorikeets except for the fruit I cover in little jewellery baggies.
Thanks for your videos. Even in my tiny courtyard garden I've been able to use your experiences (and my own) to grow fruit and vegetables. Now looking forward to moving in next several months to a few hectares and take what I've learned over there.
