VIDEO: Instant Pot Vegetable Soup with Split Peas


This Split Pea and vegetable soup is chock full of good stuff. You can make this in the Instant Pot, or stovetop in a big soup pot, either way its delicious! Here is the recipe for either way, note differences in water added and cooking time:
Perfect Vegetable and Split Pea Soup:
Ingredients:
2 tablespoons extra virgin olive oil
1 onion
3 stalks of celery, diced
2 medium zucchini, diced
5 medium carrots, diced or sliced
1 turnip
¼ cup barley
1 package of split peas soup mix with spice packet
OR 1 cup split peas and 1 vegetable bouillon cube
2 teaspoons salt
¼ teaspoon black pepper
1 teaspoon garlic powder
Water 8 cups for Instant Pot, OR 12 cups for stovetop
½ bunch of dill – reserve other half for snipping fresh when served
Directions: Instant Pot or stovetop, sauté onion until soft, then add celery and sauté. Add remaining ingredients. Add water, stir to mix. Add seasoning packet and remaining seasonings.
Instant Pot: Cook on high pressure for 17 minutes then quick release for 10 minutes.
OR Stovetop: cook on a low flame for 2 or more hours until peas and barley are cooked

  2. Thanks Tikki! I cook a very similar recipe as a staple, but it has grated lemon peel in it which rounds it off beautifully, you should give it a try!
