we make stuffed squash aka "squash boats" for those that get a little too big, there are a bunch of great recipes out there
I like to cut up squash, zucchini, onions, pepper and potatoes and carrots, toss them in butter, spices and salt and roast them in the oven. Disappears.
Frittatas!!! When we have a abundance of eggs and loads of fresh veggies I make a huge frittata. Super easy and a family pleaser!

How do you keep down the vine borers for your squash? This is the first year I have had to deal with them. I am trying to remove them from vine and taping vine with athletic tape but was curious on what you do to help with these crazy little squash pests! Love your videos Jess!!! Zucchini casserole, bread, pancakes, cake, in soups, stews, dehydrate, freeze dry. Stir fry, roast but my favorite is breaded and fried.

Cream of zucchini soup. My kids ask for it every day in the summer. It is fantastic especially served with crusty bread smeared with fresh butter
We have thinly sliced overgrown zucchini length wise, and used instead of lasagna noodles in a veggie lasagna.

So this is super simple buuuuuuuuut our dogs absolutely go crazy for dried strips of zucchini! Really easy and makes a lot!
They almost act like raw hide in a way because they don’t go crunchy, they stay chewy! Plus dog treats can be expensive, especially organic ones. Anyways, food for though for an abundance of zucchini! Happy gardening!!

Squash relish recipe please?
Cut or shred summer squash with halved cherry tomatoes and mint cooked in oil, garlic, salt and pepper is really good. Sometimes I throw some shrimp in there too. Then top with parm cheese.

I know it isn't the "approved" way, but I have been canning yellow squash and patty pan because we've had so much. I would love your squash relish recipe. We eat a lot of it as boats for taco meat or in place of spaghetti. I slice it up, add potatoes, chard, and a ground meat like turkey with a bit of nutritional yeast and it is delicious served with some sourdough bread sticks on the side. My canned squash I will use in soups and pasta sauce to bulk up and add more nutrients.
