There seems to be something new in shortage each week, so I think the best you can do is to focus on what you want or need and to try to keep that in stock and get it as affordably as possible too. Seed saving is a great idea; be sure what you save are called open pollinated or heirloom varieties. You can still save hybrid seeds but probably won't get the same thing you got from what you grew, they tend to revert back the varieties they were crossed from.
Wish you could zap me some of your elderberries. They are so expensive! Happy for your bathtub success.

I am so blessed to have a mother in law that is a market gardener and a neighbour. So when I realized I didn't have enough green beans and onions for my family I can contact them… Much rather go to my community first then when necessary the store.

Let it go to seed? I am a town boy, lol and I have no clue what that means and if it stays on the vine or in the ground longer and how do you take it from there and make it a seed you can plant in a year or two?

I need to get busy again with potatoes and tomatoes, canned what potatoes I had, now for dehydrating some. Tomatoes I am going to get some and can more and buy some paste and sauce.
** PATARA** HOW DO YOU SAVE YOUR TOMATOE SEEDS?
My local grocery store has canned tomatoes on sale and I bought some. Tomato sauce too. Tonight I'm canning more spaghetti sauce with meat. My garden still has potatoes and other root vegetables and peppers. Potatoes at our stores are becoming more expensive. I've bought what I'm going to and have canned a bunch. At some point I have to go to other things. I'm waiting for biopsy results to come back and I'm keeping busy with my pantry. I bought some food grade buckets for organizing it.
