You could add coals on top and not have to flip.
Chef here — preheat and grease both the pan and the lid — and when you flip, just flip the whole “oven” and no need to lose heat transferring to a plate.

I went to Target today in Texas. Ramen was down to a 3 foot section. The shelves were empty except for 32 individual chicken flavored packages. Unbelievable

If they are cooking to fast on the bottom over a fire, put down a thin cast iron skillet, fritter pan and use the top of that, or even another cast iron pan under pan the biscuits are in.
