Fermenting is a great way to increase the bioavailability of nutrients in certain foods; it improves gut health and strengthens the immune system. Plus, we love the way it tastes!

In our bodies, bacteria outnumber the cells containing our unique DNA by more than 10 to 1.

The vast majority of these bacteria- around 100 trillion- are found in our intestines.

Bacteria break down nutrients we would not otherwise be able to digest and play a vital role in regulating the balance between energy use and storage.

Intestinal bacteria also produce certain necessary nutrients like vitamins B and K.

Our intestinal bacteria and immune cells of the intestine linings are constantly communicating to protect us against incoming pathogens.
