If you’re new to using the Instant Pot, don’t worry, I will explain what I do step by step so you can follow along and make your own pot of this delicious, nutritious and very filling soup. This recipe will make 6 to 8 servings. The soup will come out thick and chunky. If you would like it more soupy, then put in less vegetables and more water.
The ingredients you’ll need:
2 cups green or brown lentils
2 onions
One head of garlic
2 large carrots
5 stalks of celery
1 red bell pepper
1 28 ounce can of diced tomatoes
2 cups of fresh or frozen spinach
And 4 tablespoons of extra virgin olive oil
For the seasonings you can use any spices you like, here’s what I used:
1 teaspoon dried basil
1 teaspoon Italian seasoning
2 teaspoons sea salt
1 teaspoon cumin
1 teaspoon turmeric
1 teaspoon garlic powder
Fresh ground pepper to taste
Some say that soaking lentils, beans or peas in well salted water, then rinsing before cooking, helps them turn out better.
Haven't tried this yet, but plan to give it a try soon.
Garbanzos especially are supposed to be much better this way.
I am four days into a five day water fast and that looks absolutely delicious! I will have to make some when I can eat again. Did you ever try bone broth or vegetable broth instead of the water?
