There is a sure-gel product on the market that does not require sugar to set the fruit. Check out the instructions. You will need an alternative sweetener though like equal or honey. Directions are very similar to the regular sure-gel that requires sugar to set.

I tried my first attempt at "canning" into jars. I'm just using screw on lids that don't have a separate seal. How do I know if they are properly sealed? I've made chilli sauces in tall bottles with the drip caps before but this is my first time using jars, and the lids are obviously different. Any advice would be appreciated.
Interesting, but NOT the definitive answer on preserving the harvest. Learning how to make and can jams, jellies and pickles is okay, but what if you want MORE? Learn how to can practically anything, including stuff like soups, sauces and meats! Here is one online source of excellent information:

I used dry apples on several wooden dowels which were cut to tightly squeeze in either side of the oven. In this way you can use your oven far more effectively and efficiently. The apples were washed, cored and sliced neatly then threaded onto the dowels evenly spaced. You can get 4 to 6 full dowels in the oven. Check them half way through the drying time and swop the dowels around to ensure all are drying well. Thanks for sharing.
