There are certainly many many more flowers that one can eat. I dry my hibiscus flowers for tea, squash flowers are good, onion and dandelion are tasty as well.
This year my nasturtium died early in the season due to extremely high rains.
Rose petals are the best among all, usually they are cured in honey or syrup to make gul-qand and rose water is well known for its properties.
There are non-edible marigold varieties, namely Tagetes, commonly called French Marigold. The edible ones are the Calendula varieties.
How many acres do you have for your garden? It looks like a great space
anybody who likes arugula would like nasturtiums.
…and native day-lilies are 100% edible.

I read on borage it might not be safe to eat? Because of the pyrrolizidine alkaloids . Maybe just in high doses

I love borage…you can eat everything from this plant. In northern Italy, they use borage for ravioli filling.
Does anyone know if arugula flowers are edible? I tasted a few and they have a more potent arugula flavor

Chive flowers, squash flowers, day lily, and arugula flowers are also very nice. But my favorite is pineapple weed "flowers" – delicious. I actually let my greens go to flower for the bees.

The reason most people think that flowers rotates bag is I'd assume that most people were kids and probably ate a flower that happened to be the wrong one, spend it out and was like "nope, lesson learned"
That's also how a kid would hypothetically learn that three leaf clovers kind of taste like lemons.

Nasturtiums are my favorite flowers to eat! The buds can be used like capers as well!
So cool! I grow cilantro and basil a lot. Now I’ll be happy when they start to flower. I’m excited to try some soon!
I have a couple culinary sage plants. I use way more of the flowers than the leaves. One I grow just for flowers. Look good, attract bees, and are a great garnish for chicken salad and the like. Sweet and a more gentle sage flavor
