This video shows biltong being made in an Exclaibur Food Dehydrator. Biltong is a South African dried meat (usually rump) that tastes great and keeps well in the pantry. See https://www.selfsufficientme.com/sustainability/how-to-make-biltong-using-an-excalibur-dehydrator for my full recipe instructions.

Yeah dehydrators arn't for everyone and the smell (just like cooking in the oven) can go through the house. I have mine in the laundry so I can close it off but the garage would also work well. I use my dehydrator mainly for storing a glut of food which would otherwise go off and have to be thrown out (like fruit) and I do like dried meat (biltong/jerky) but plenty of spices are the key for great taste.
@Silkymits2000 Thanks – I want to do more vids this year. I love those Indian spice shops. Bought one of those hand-made chapati makers a few months ago from a little shop in Aspley – a terrific tool and it makes great pancakes too! Not the best for paleo diet though, I guess 🙂
Hi there, I am looking go make droewers in a different dehydrator but can not find and times or heat info. What heat do you use and for how long? Do you know if you can use low fat sausages from the shop?
What the hell are you saying at the end?? "Excalibah dehydratah : what a rippa devoice". Speak English!
Your heat is too high for biltong. Biltong is suppsed to dry at a lower temperature for a longer period of time.
Hi Mark, not sure if you will still read an old comment section, I am South African and can tell you that it is better to hang your biltong. You can check online there are some brilliant and fairly recent plans to build biltong driers.
I personally love my biltong to still be very wet with a good layer of fat, we call it "wet and fatty" anyway, love the channel. Bye for now.
I have a 9 tray Excalibur dehydrator and I reckon it's the best thing since canned beer. However, if your a first time buyer of one of these things, take the recommended drying times in the instruction manual with a big grain of salt – most foods will take a lot longer than the manual suggests. Nevertheless, I still think it's one of the best bits of gear I ever bought. Dry dehydrating water melon – it'll give you flavour and sweetness overload you won't believe!
