  1. I love this. This reminds me of the madrigal dinner they used to do around every Christmas at one of the college's around here. They would charge about$20 and you could go to the dinner and be entertained by the college choir at the same time. They would do a play and even small groups of them would come gather around your table and sing to you. They even sang a song called "wassail" but they pronounce it very differently. They pronounce it sail as in sailing in a boat on the sea. Very fond memories, my brother went to that same college and I went to his dinner one year too

Our kids are grown and we are older now, so with that said lol gallon of apple cider, gallon of apple juice , 1 cup of brown sugar and a vanilla bean heat in stock until sugar is dissolved let cool and add everclear…vodka or what ever you like or leave as is, I jar in ball masons and often give as gifts or bring to Friendsgiving!

  4. When I first tried a cider that I actually liked; the maker told me she likes to add 1/4 Pears to 3/4 apples.
    I love hot cider with the spices. Thank you for sharing how you make yours; I hadn’t thought of making it with fresh items. I have always bought a mulling mix. In the future I plan on making it fresh.

  5. We make a spiced tea to enjoy during this season. It also uses cinnamon sticks, cloves, and orange juice, but we add pineapple juice, a little lemon juice, and strongly brewed tea. It's delicious!! Thanks for your recipe. We'll have to try this one!

  6. It's not really a wassail, but I like to simmer apple cider with a spicy chai blend. Sometimes I add caramel sauce. The local coffee shop when I was in college called it a "caramel apple chai-der"

  7. This sounds soooooo DELICIOUS and I like the fact that there isn't any alcohol in it. I will do it in a slow cooker so it will really add a great aroma in the house cuz I am having a little family gathering before Christmas and this will be awesome to smell and DRINK. TYFS.   8. I’d never heard of this! Most exotic my CA family has ever gotten is spiced cider, (alcoholic & non alcoholic). Sounds absolutely lovely for the holidays & winter months. I imagine the aroma throughout the house is a pleasure. Thanks for sharing this recipe!

  9. I have a large pot shaped collander/sieve that I put in my pot first. When it is done, I just lift the seive and like magic, it's strained. I am kind of like you, I just chuck stuff in it till it looks good. Apple cider, orange juice or powedered Tang, sliced apples, cinnamon sticks, orange zest, sliced oranges, cloves, whole allspice maybe some honey from my bee hives. You guys survive the "snow strom"? We got nothing 30 minutes west of you.

I use cranberry juice instead of orange and a clove studded pear instead of apple and sorry but a little bit of rum it burns off so not really alcoholic and a little butter it is also my favorite winter celebration drink but I made a little too much this last batch so I made a apple type spread almost honey consistency and it turned out really good and still got about a gallon in the freezer for Christmas hope it thaws good enough to drink if not more spiced apple spread LOL Happy Holidays and blessings  to you and your beautiful family

  11. Hey dear one, that drink is looking good indeed… I think I'm going to try that one too, with Christmas, when we are at my mom's, and when we have our old-year's-day traditions in her house. This would add a nice 'new' tradition 😉
    Thanks for sharing! It's totally different from the punch we got when we were young and visiting aunts and grandmothers: I never liked that cold and stringy version with too much grapes and melon. Never felt that it did fit in this season. This version would benefit (in our house) from the apple cider with alcohol (you call that hot apple cider, right?) added when it's cooling off 😉
