Green table onions when dried are sweet. I pick and dry them as they are so sweet. I can see why they make a great pesto. Every time I buy table onions at the store I ALWAYS put the root back in the ground. I have had the same onions in the ground (on the south side of my house) for 4 years. If it gets really cold I cover them with straw or cardboard. They love the cold a will survive. Also I dry my lemon rinds and use them for soups. I think your a great kitchen magician. A word of advice. When your husband retires, keep him out of the kitchen. My husband always walks in a says…….your putting that in there!!
I'm binge watching some of your episodes. You mentioned recipes. A basic recipe is always a good place to start. I share mine with the 'minimalist' (bare bones) ingredients with suggestions for additions/ changes. AND room for notes! My sons' friends (and now their girlfriends/wives) love the format.

another way to preserve it further would be to freeze dry or dehydrate the pesto into a mix and you just add oil. I have a mix from knorrs that's like this
