Do you still have your horses?
Burying waste under your home may cause issues with vapour intrusion into the house. You may want to consider this and make sure there are no potential volatile contaminants that may find a path to your basement or other path to an area you will have your family breathing the air.

I love all that you're planning and doing. My husband and I have lived on 3 acres here in Alaska since we were in our 30's. We're in our 70's now. We love it here, and our kids have land around us, though they aren't presently living on the land…we wish they were on the land. It would be so much fun for us to all be working together. Nevertheless, we still love it here. We enjoy gardening, but it's tricky as the moose love the garden too. Because of this, we now only plant spuds, onions and garlic, all of which the moose don't like. The other produce is planted in the greenhouse, and that's working very well. I"m amazed at how much can be grown in smaller spaces. I love, love, love gardening! I also love watching what you're doing with your land and animals. It's thrilling to see what you're doing, with so much land.

Meyers lemons grow great. N I take n cut branches and make lots of trees out of one. I just stick it on the dirt n it grows.
Amish put the fig trees next to their house n covered under other trees but get sun. I was astounded at how large n juicy their figs were.
Pig was never called food, lamb would be better. 🙂

Please make videos on planting your fruit trees and berry patches and curing your pork! I’m so happy I found your channel we just bought a fixer upper on 15 acres and our so excited to start our homestead!
If I was them I'd make a small field of those trees the deers love so they would have deer to admire & or hunt if they needed to.
