For helping to avoid burning on the bottom of the bread, in addition to adding a cookie sheet to the bottom of the oven, I’ve also had good luck adding a layer of coarse corn meal to the Dutch oven before plopping the dough in to create a little separation between the bottom of the loaf and the pot. Just a tip that works for me!
U could donate the goats milk to local rehabbers! Deer drink goats milk so i bet u have a small one by u since it's wooded. Even a backyard rehabber could use it ☺️
You can hire your goats out to “goatscape”, like your friends are wanting to clear out areas. You can make a business out of it…just a thought.

Try a pizza stone!!! We're RVers and RV ovens are NOTORIOUS for burning everything (super small oven) but you put a pizza stone in on under the rack (would go on bottom rack in a conventional oven) and you put your sourdough pan in a rack above. The pizza stone dissapates the heat more evenly.

I put a cast iron trivet inside my Dutch oven then I put parchment paper on top of that and that tends to work a little bit better

I've had good success with using a pizza stone on the rack below the dutch oven to prevent burning. I think the thickness of the stone and way it evenly conducts heat is key.
You shouldn't think its "unfair" that you have so much blessing. You have sown so much into the lives of others with all you have shared with us about your farm and you are reaping the harvest of blessing from all that you have worked on with so much intensity. I have enjoyed your channel for more than just the garden and farm learning it provides, it's like visiting with a friend each time I watch one of your videos.

All you can do for your bread not to get dark on the bottom is put a little rack In the bottom. I use the little one from my instant pot I
