  2. The nicest thing about rain on the farm – you can map out the water logged areas and be sure to amend the depressions with soil to prevent water from pooling and also make notice if runoff or rain gutters need addressing.

Pro-tip from someone who processed loooots of raw jersey milk at the farm I used to work at: you can make multiple products at once if you culture the cream with a Flora Danica culture (would highly recommend New England Cheesemaking as a culture source). The cultured cream makes sour cream and then you can process the rest of it into cultured butter that freezes REALLY well 🙂 Enjoy your delicious jersey dairy products!! I miss them so much.

  4. Here in Italy usually the 1,000 gram round forms like you have are what they sell fresh ricotta in. If it doesn’t sell on the first day or they want to sell more variety of cheese, they will salt the top of the ricotta filled form and sell it as “primosale” or first salt. It has a silky texture and is like paneer and very delicious. As always you are a wealth of information that has been well researched.     I could only wish I were as wonderful as you. I HAVE TO STOP and slow the pain takeover. I NEVER get everything done. I so wanna be raising my babies again. I used to tell myself to enjoy the moment you don't know what later in life will be like. Well now I do and I still think I didn't appreciate it enough. Gosh ladies, enjoy the moment and be ever so mindful of who loved you first and thankful for the moment. A simple moment goes away fast …. just like Butterfly kisses and water color ponies on the refrigerator. Many regrets, but many more blessings.
