~ 1 cup leftover mashed potatoes
~ Diced onion-small bits
~ 1 Egg
~ Dash of Salt
~ 2 1/2 tsp flour
~ Dash of vegetable oil
~ Mix!
~ Fry in oil after spooning in & flattening
~ Cook for ~3 minutes on each side over medium heat
~ Enjoy! xo

  1. I miss my grandparents! When I was a child, my grandma couldn't keep me out of the kitchen! I loved cooking, baking & preserving with her. Unfortunately for me, I never kept up with all her traditions. I'm realizing in the last 2.5 years, that I have to go back to my roots & keep those traditions alive. I need to have my daughter come watch me put up some things!

    Those tater cakes sure look heavenly! M fiancé & I always watch your show. He can hardly wait for me to make them, but he was worried about the flour, bless his sweet heart, but I can use a gluten free 1:1 flour easily. I'll be making them soon!

  2. Love it, we grew up having my Grandmother teaching my mum and loving what we called EggyPotties, the difference was no salt or onion, I am on an eight day fast with with 28 hours to go and I can taste those in my mind right now with Brown or Tomato sauce!

  4. My Grandmother made these for us as kids. She always made extra mashed potatoes so some would be left. I made them for my children and my daughters make them for their children. We all really like them.
