I wonder if you can freeze dry the roasted garlic?
It's interesting how home design changes over the years. Way back about 1960, I took some interior design classes. It was considered poor design to allow anyone entering your home to see past the entrance because it would intrude on the privacy of your home. A guest would come around your black wall and have an aha moment when they saw your beautiful view. What you have done is beautiful.
Becky in the video you sad the garlic confit was only good for about a week in the Refrigerator so you were going to freeze it. So how long is the garlic oil good for then? Doing a great job thank you.
Good to break eggs on top of hash and put it in the oven to desired doneness.

Thanks for the house update. I had been wondering how it turned out without that wall. It is all coming together nicely! I always wondered what leeks tasted like. Now that I know I will have to give them a try.
That hamburger hash looks delicious! We love Brussel Sprouts too! The garlic infused oil looks so yummy! I never thought to freeze garlic! I definitely have to try that! I bet it’s nice to see all the little things like floors, doors and trim getting done! It’s looking so nice! You have such a beautiful home and property!

One year we were blessed with a lot of Brussel sprouts so, since when cooked they were quite strong flavored, we made coleslaw with them instead, cut into fine ribbons, same with some purple cabbage, and then some fine shredded carrot and small dice on the shallots and your favorite coleslaw dressing. ours was quite simple that year, Miracle Whip, Ketchup, and some sweet pickle juice. to taste, of course it was what was in the pantry. but it was Delicious!
I would love to see how you care for your cast iron and Dutch oven, how you wash it, if you oil it or seal it and of that stuff

I read that turning the flame down and confiting it super slow and low brings out even more flavor. So the oil isn't bubbling/boiling at all. Pretty much cool enough so you could still be able to put your finger in the oil and you wouldn't burn yourself. It takes longer obviously but worth it if its a more flavorsome result. 🙂

Make it a habit. Things can go south in an instant. Your pregnant and when the baby comes especially. I had to teach my little ones to hold on. My daughter suffered a bad concussion going UP the stairs her 10th grade year. Setting her up for a gear of therapy and home based instruction.
She was not holding on going UP. My husband slipped this year, messed up his knee for almost a year in therapy.
We all have tumbled. Please hold on going down and up.

When you freeze dry garlic, then powder it, doesn't it reconstitute when the air hits it??

Becky…I look forward to each one of your videos! You may know this tip, but I thought I'd share it in case you don't. I have tried numerous ways to get remove permanent marker writing on mason jar lids. The BEST solution is to use a dry erase marker to "color" over the old writing. Then wipe it off with a damp paper towel. The alcohol must dissolve the permanent marker. Voila!!! I then wash the lid/ring with warm soapy water and dry very well. We don't can so all lids and rings are reused for dry good storage.
So glad that hideous black wall is gone. Looks 100% better.
I can't believe you chopped an onion on the same board you just chopped sandy/dirty leaks. Also, if you will WAX the floor in that big room NOW no one will ever know that board was replaced. Wear your baby like that other women do on Homestead videos. Works for them. Rolling a baby around in a house won't work.
If you don't someday become a Rachel Ray or Bobby Flay type celebrity I'd be surprised. You go girl!
