Definitely get a bosh mixer. I got one at a estate sale about 5 years ago not knowing anything about it. It’s a game changer. You can mix dough for a lot more loaves of bread much easier. The mixer I got has all the attachments. I only paid $25.00 for the whole thing.
You and me both I could watch her mom and her cook all day long every day they are never long enough even when it’s just Becky I’m like oh my it’s ending already

I bake all my bread ( Norwegians, and we eat a lot of it) i have a kenwood major kitchen aid? It takes batches of 3kilos of flour and 1,7 liters of water/ Milk a time with No problem. Its enough for 4 breads at a time. I can reccomend it for sure, i love mine. Also, your rolls ( rundstykker in norweigian) Was perfekt. You can lay them on a cooling rack when you take them out of the oven so they get a crispy outside. If you want a soft outside you put a damp cloth over them ( same for bread) if you want a soft outside] if you cool them in the pan, they can get raw inside.

An Ankarsrum mixer is what I would rather have if money permitted, as I have a Bosch mixer and dont get me wrong, its a really good mixer but the Swedish mixer has actually outperformed Bosh, just as Bosh outperformed the Kitchen Aide mixer.
Next year- you should spatchcock your Turkey and it will cook faster
