All of my kids love sardine fritters the most. Yet, I can't get my oldest child to eat tuna or canned salmon, so I'm going to try the dijon and lemon juice next time. Thanks for sharing.

Oh man! You are definitely a southern cook! I forgot about tuna and salmon patties. My Grandma used to make them along with fried okra and collard greens! Yummy!!
Butter is a necessity in a southern kitchen. The best pie crusts are made with lard but I haven’t used that in years! I’m so glad I spent my summers in TN as a kid and learned so mych from my Grandma.

Oh yummy! I grew up with mackerel and salmon patties!
I use Mayo instead of the egg. I also have dredged the outside with some flour and cornmeal mixed with lemon pepper and such. I have even reworked catfish leftovers in this way. I chop green onions and put in them if I have it.

Other great binders/fillers are leftover cooked rice or spuds. With the potatoes, just mash them to use them.

I just use flour and about 2 eggs, Tuna, salt, pepper and a little garlic powder. On the side I have either green beans or English peas. Very simple. Oh yes girl butter makes cooking meats so wonderful.

I use the inexpensive stove top boxes with salmon or tuna and butter and chives or green onions yummy! Love your videos girl!
In my family, we used to fry fish gonads this way.
Look nice & crispy, i do salmon ones, but ive never tried the crackers as filling, just flour & B/crumb, will give that a go, could put a drop of sweet chilli sauce in. Love the cast iron skillet, way better than the fry pan ive got, im looking to get one.
