Mmmm! Yum! One thing I like doing with the outside cabbage leaves that usually destined for compost…they are used to line the bottom of roasters. Prevents burning, adds flavor. Good stuff!
I love cabbage also! These look amazing. I’m watching this Dec 7th so I’m assuming this is the harvest date, right? You mentioned starting indoors under lights and planting outside four weeks later. What is the start date?

Thank you, I share your enthusiasm for your cabbage harvest! How exciting!! We canned sauerkraut with several of ours this summer. I'm going to try some new varieties next summer. We ended up starting our cabbage from seed sown directly in the garden. It took a while – all summer in fact – and there was a fair amount of bug damage but we still had a good harvest. We will definitely try protecting the cabbage early on next summer with insect netting. Thanks for all you shared!
