  1. The Dutch come into play because at the time and until the 18th century the territories of the Netherlands, Belgium and Luxembourg belonged to the Spanish Crown. So it would make sense that Spanish crops were grown there too.

  2. Selective breeding and inbreeding is why organisms are weaker and less nutritional. Selecting for size doesn't Select for nutrients and so on. Like with everything plant life is devolving losing genetic diversity over time
