One of my favorites! Throw some in your stir fry. Yum!
That weed drives me crazy. I didn't know it was an edible weed. Too bad I can't harvest it here in my co-op community because they spray pesticides. Thanks for the info Kevin. You taught me something new today.
I've been eating it for years, has a citrusy taste, use in smoothies too!

in the philippines, farmers give it to the pigs. it's very high in vitamin c btw.

I'd just like to warn y'all to be sure you're not harvesting purslane's toxic look-alike. Please be sure to positively identify things before eating them.
Make sure to look up identification details so you don’t confuse it with a slightly similar poisonous plant.

Poor corn, weeds take their nutrients.
Verdolagas in spanish they are fire with pork in a spicy red sauce.
I too have a large patch of healthy purslane in my yard. will harvest it soon for salads

I like to sauté them with onions, garlic and a little of habanero pepper. And put some inside a quesadilla. They taste delicious! They are known as verdolagas in Mexico and they are used in many dishes.
We love it in tomato salad with onion , olive oil and balsamic vinegar.
My grandpa would feed them to me.
Super nerdy, but plants that can withstand heat or drought separately evolved 2 different, unique types of photosynthesis adaptations. Purslane is super cool & unique because unlike other heat/drought tolerant plants that evolved either one or the other, purslane evolved to have BOTH. It's begin studied to help understand how we may be able to engineer important crops to also have both that have only evolved to only have 1 in order to better withstand climate change. A very unassuming, but amazing weed.

It also grows beautiful red flowers that you can cascade over a hanging basket or put on a trellis. It’s called purslane.

The other great weed in spring is chickweed. Grows everywhere. So yummy.
Yeah makes a great pesto too. Also high in vitamin C
