I was wondering if you had started a compost pile or system at your new home yet. Very exited to see how you will go about starting the new garden.

You are more ambitious than anyone I know! A tip for tomato products, when you have to reduce tomato sauce it will go faster if you do it in lower pots and lesser amounts in the pot. I have a really large pot whose sides are probably one third the size of yours and it is bigger around so more surface area. It evaporates the liquid much faster. I think by doubling the recipe and using such a huge deep pot the evaporation was not as efficient as it could be. Also why can't we pressure can pumpkin purees? We can buy them canned! Somebody is canning them and the FDA is approving it!
I have to get me one of those freeze driers!

To thicken your ketchup, use two pots instead of one big one.

I cooked my butternut squash and pumpkins and then dehydrated the puree. Later I turned it into powder. I haven't tried to rehydrate any of it to make pie but it's great for thickening soup. I'm sure it would be great for making butternut squash soup!
My ketchup looked much like yours. I cooked it about 30 hours in my electric roaster and it was still runny. I had two quarts of freeze dried tomatoes that I powdered in the blender and added to the huge pot. Adjusted the spices and within 2 hours it was thick thick wonderful ketchup
I’ve never made ketchup but I think adding more sugar would thicken up the ketchup.
I personally have noticed if I want something to thicken up and I have a large pot I put it into smaller pots that way it seems to thicken up much quicker.
I wonder if the Roma tomatoes you got this year weren't a paste variety. My mom makes a huge batch of pasta sauce every few years that is super thick & she gets canning tomatoes in Yakima WA. We have family there so they're able to have a nice visit & stay a few days if they want & the price is worth the drive usually so if you ever can't get what you need around our area you may consider the Yakima Valley or Grandview.
I would have gone for the higher sugar recipe to help the thickening. Think that would work a bit better. I've had the same problems with jam -huge pots seem to take WAY longer than the recipe

The best sauce recipes ive seen use a variety of tomatoes & some use persimmons
I use apples in my ketchup as a thickening agent.
The water in the jars is sterilized & flavoured. Use it for vege soups rather than tipping it down the sink.
That 1870,s homestead hooks up a drill to the handle of the sauce master so it goes really fast and he doesn’t have to hand crank
You may use the squash for baby food, also your apple sauce. You haven't even mentioned having a baby to feed.
