Lucky you can do that. I live in a warmer part of my province and we had a mild winter here. Only -30 for a week was our coldest. Maybe could have done spinach this past winter.

Nice! I ate some Red Russian kale out of my garden today (plants are three years old now) and I already have some Space Spinach seeds on order, conveniently.

How often did you have to uncover and water during the winter? Also, do you leaf harvest during the winter or just save it all for a nice early spring crop? Lastly, would appreciate design details on your beds…how long are they and do you have cross members to prevent bowing out?
I notice irrigation pipes in with your spinach etc. Doesn't it freeze? We blow out all ours sometime in October, so nothing is watered after that. I'm zone 6b also, but didn't get as cold as you. I'm more semi- desert in north east Oregon.

I grew lettuce, turnips, beets, carrots, spinach, 3 types of kale, even radishes over winter in a low tunnel. We have milder winters in my area but we still get below freezing. I wanted in the fall and let them Get established then over winterd them and harvested all winter.
Just getting my farm started still cleaning up what was left by previous owner. Gardens growing great and I am selling in local farmers markets.
I’ve found that blue scotch kale does well, and over winters better than red russian for me. My area (zone 5b) had a mild winter and only got down to -15C, and both kale varieties survived with no protection. Last year, a few blue scotch kale plants survived -30C with no protection.
maybe the colder weather is actually better in that it kills off all the pests too!
