The astringent persimmons are best dried. Peel the skin off and hang them somewhere with light wind or good air circulation. They’re called hoshigaki in Japanese. They’re a delicacy, a natural sweetness, and a gift from Mother Nature.
Never could eat Japanese or any large cultivar of persimmons. I love the wild ones, which are much less astringent when fully ripe.

My parents have one persimmon tree in LA. The Hachiya. Needs to be ripened. There thin tree produces so many the branches break… amazing production… they have a little Fuyu also, which does not need to ripen much to eat. Amazing. It is ridiculous how things grow there in LA, California. Oranges, Fig trees, everything. We have it rough here in the Northeast. I have been looking for a Persimmon tree to grow here out east… you are giving me some ideas. Where do you buy them ?…

How old is that tree?, and how long does it take to bear fruit?
I was surprised you could grow Persimmons in N.E. U.S. I've stayed away from planting them cuz I thought they needed a warmer climate. My hardiness zone is 6A; you said you were 6B. Generally they grow in 7-10 zones, right? I'm so happy after watching your videos on Persimmons that I ordered two types – the Fuyu Asian and Saijo Asian Persimmons. I ordered from Stark Brothers. They should arrive in mid-March. I'm excited to see if my will do as well as yours. Thank you so much for all the information you gave on the Persimmons.

Is it too risky if I decide to plant a Fuyu Persimmon tree in a 6a zone? I grew up eating this fruit in Brazil and would love to have one in my backyard.
I looked for it at Raintree Nursery and it's sold out. Any other suggestion?

Just an FYI, the "Asian" Persimmons have hundreds, if not thousands of varieties and they are both astringent and nonastringent, or rather less astringent as all of the fruits have tannins, which is what causes the mouth puckering sensation, just like grapes (especially red wine grapes, which is why some people get headaches after drinking red wine but don't after drinking rosé or white wines), and Wikipedia actually states that there is a third lesser known category and it states the following:
"There is a third type, less commonly available, the pollination-variant non-astringent persimmons. When fully pollinated, the flesh of these fruit is brown inside—known as goma in Japan—and the fruit can be eaten when firm. These varieties are highly sought after. Tsurunoko, sold as "chocolate persimmon" for its dark brown flesh, Maru, sold as "cinnamon persimmon" for its spicy flavor, and Hyakume, sold as "brown sugar", are the three best known."
Persimmons have seeds only if they have been pollinated, so it has nothing to do with the variety. The same tree could produce fruits with seeds one year and without the next or a mix of fruits with and without seeds the same year provided that not all of the flowers were pollinated.
The scientific name also does not mean divine as is commonly thought, but rather dio is an affix assigned to plants and the word persimmon is derived from the Native American language of Powhatan, which is an Algonquian language. Kaki is the Japanese term for the fruit and commonly used in other countries as well.
