Nice setup. I like sun dried better than in my electric dehydrator, seems to re-hydrate easier and taste better, especially mushrooms and tomatoes. That setup may mimic the results from straight up sun drying.
I'll take the dried stuff on the trail and add it to soups and such. fruit roll ups are nice for the trail too, quick easy high energy snack.
I like that you used a control to test the effectiveness. Maybe with some more experimenting you can increase the efficiency.
I'll bet on the MRE's. Main way I noticed the sun dried being better was with morels. The electric dried morels taste a bit like cardboard, but the sun dried taste fairly close to fresh! I have a bit of a hard time sun drying here, because it always seems to get real humid or rAIN WHEN i DO.
Maybe if the whole thing was made of plexiglass it would dry quicker, the wood may act to hold in moisture, not sure. I think it's a cool experiment either way. Maybe it would double as a smoker.?
Painting the vent pipe will really make the air move very fast, so try that too. I know this was made a while back, but thought you might like to try the paint thing on the vent, it makes a huge difference. I would watch out with replacing the wood with the plexiglass, because the chemicals could leach into the box. Being outside of the box for the air to flow it is fine, but becoming part of the box may not be safe. Just a thought.
