Wow, those are monsters! I have not been sure on how to cure the tubers after you harvest them. They seem to just shrivel or try and rot. Also, I forgot to add that I think the compost probably had the most effect.
Coulb be worth leaving one in the ground for the next crop then. Do you think a hard winter would have made a lot of difference? we had a fairly mild one.
It's best to let them sit in the sun for 1 MONTH after they are harvested. ( a lot SWEETER that way) However since you left them in through the winter this may not apply now. wow, those are huge..I pulled my plants end of season and potted them up for winter..replanted, will see..are they anything like sunchokes? do you think they would be good pickled? I pickle my sunchokes and love them..good video

How cold did it get? I'm amazed at how large they are.
