If you are anything like me you are always looking for new ways to use rhubarb in more than just pie and jams. I love both jam and pie but we cannot eat as much as my garden produces. I found this rhubarb BBQ sauce in the Ball Canning Cook Book and we have fallen in love. I hope you enjoy it!

Oh my word, I watched this and said, "YES!" I had frozen rhubarb from the garden and a friend, which I intended for rhubarb strawberry jam as my grandma used to make. However, I have been on a weight loss plan for knee replacement surgery and have cut out almost all bread, and only occasionally rice and less of potatoes, so had not made the jam. This would be used way more than jam.. I invited one of my sister's and my sister-in-law over and we made 3 batches of this barbecue sauce, but only got 3 pints each and I got an additional 3/4 of a pint. I think because it was a little thicker like jam and not watery. We all liked that better anyway. This with your spice change up is absolutely delicious. We all said we wanted a meal asap using it. We did set a family barbecue for August 7th in memory of our mom and we're going to do chicken and ribs with this, as well as have potato salad. Her birthday was August 5 and she passed away in January. She was our example for canning and we all learned to love cooking from her. Thanks for the great recipe. Your version is the best! I want to make more.

I'm going to be making this, glad I looked it up first and found your take on it because I noticed every other BBQ Sauce has dry Mustard in it. Would you say your version makes it taste more regular bbq flavor like?

I was so pleased when I realised this was a recioe that can be water bathed as I don't have a pressure canner. I planted rhubarb for the first time this April so CANNOT wait to try this. Question regarding the spices. The amounts that you provided…is that the “normal” recipe amounts or your quadrupled amount? I’m really enjoying your channel. I need your knowledge and energy!
Why do you need to put the filled jars into the pan and boil them if you have sterilised your jars and fill them with hot sauce. Then put the lid on?
Can I ask why we don't want to add Iodised salt?

Like celery rhubarb has strings, you don’t take them off before processing them? Even if you blitzed it, is the final product smooth?

Where do you get your canning jars?
Becky please get yourself a couple stainless stock pots and do NOT cook in your aluminum canner, it's not designed for that, especially with vinegar, it can cause aluminum toxicity.
I think you said there are 8 tablespoons in one cup. You needed 12 tablespoons of molasses. So you put in one and a half cups. Actually there are 16 tablespoons in one cup.

My favorite part if the canning process is the when the lids start pinging down! Definitely music to your ears! Used to can with my mom, putting up hundred of jars over the years. I’m not exaggerating that each and every ping sound we would get excited! It’s like a little pat on the back of a job accomplished!
Oops! 16 Tblsp per cup, not 8! You got the measurement rigbt, just misspoke re adding the molasses. Thanks for the fun!
When you have to measure and pour sticky things like honey or molasses it’s best to spray the measuring cup with non stick spray first. Then it will slide out
Why do you have to remove the rings from the jars for storage?
i bought the canning book you recommended today…however, I want to make this recipe right now. Lol. I hope it comes early on Friday. Ohhhh the apple cinnamon bake was delicious!! I started with half the recipe to make sure I liked it. It's a keeper.
@AcreHomestead just wondering why you use a dry measuring cup when measuring wet ingredients? Is it just me or did I miss something? One cup liquid is a bit more than one cup of dry measuring. I know you don’t follow exact recipe sometimes
That isn't a savory recipe with all that sugar and raisins.

This sounds incredible! If you've never tried it before, I think this sauce would be delicious on pulled pork BBQ nachos!
