  1. For kitchen gardens, always harvest the largest leaves closest to the ground throughout the season. It reduces ground pests. If you don't want them in salads or soups, add them to your compost reap. The plants will look more like little trees, and as you slowly expose the "trunk" you will also be revealing the most mature sprouts for reaping. The plant can grow amazingly tall for what it is, continuing to yield until later in the season. I liked to do some light mid-season inter-planting among the exposed "trunks".

  2. For anyone who is wondering, yes, you can eat the leaves, and it's best to eat the leaves too so that you don't just throw them away. You can eat the leaves of any brassica, including broccoli and cauliflower. You can eat the leaves of horseradish too.
