The mayo cheese makes a good topping for garlic bread also.
Becky, I was quite surprised that you let the tomato juice just go in the sink and not save it to use in another way. I guess the salt with it might have made it too salty
In your zucchini when you added the squash to your pan… add diced tomatoes and a half a can of corn or your frozen kernel corn once it is cooked top with cheddar cheese and let it melt. That is a side and sometimes main dish my family has been making for years.

A lot of times when you get siphoning to that degree its because the pressure is running a bit too high. If you were closer to 15lbs than the 11lbs you said you needed for your altitude that could do it. Or if you blended it up and incorporated a lot of air into it just before you put it into jars, I've seen that happen too, but I think you left plenty of time between blending it up since you then cooked it down afterward so that is probably not why. It was most likely the pressure being higher than it needed to be since you had the correct amount of headspace to begin with.

Tomatoes seem to expand during pressure canning, unlike in waterbath. I give tomatoes products about an inch and a half because yeah… siphoning is really bad with pressure canning tomatoes.

Don't put foil on the bottom of your gas stove! It'll melt. That pie looks amazing!
I love the way yours looks. That crust is so golden and the cheese set perfectly!!! I also love watching Meg in the kitchen over at Hollar Homestead. She's a whiz in the kitchen like you. Did you see their terraced Garden? They were the first ones I thought of when you mentioned you wanted terraced beds. Simple and clean design.
We use our vacuum sealer a lot! I’m hoping to get some green beans from my garden. My plan is to Blanche them and then vacuum seal them and put them in the freezer. We love roasted green beans and this way we’ll be able to thaw them and roast them!
We've made many an emergency casserole using the mayo/cheese mixture, but never a tomato pie! It looks amazing.
If you'd like something of a variation on this, you could try what my family calls hamburger pie. You brown up a pound of ground beef + a diced onion and some garlic, add some ketchup or tomato paste until it has a thick, juicy consistency, add some basil, then melt in some handfuls of shredded cheddar. Put that in a parbaked pie crust, top it with sliced tomatoes and then some more cheese, cook until the cheese browns and it's all hot. It's delicious.

I’ve had siphoning if I don’t let the pressure come down completely in my electric pressure cooker. When you nudge the steam valve it can cause siphoning.

You can call your tomato, garlic, and onion cans "red sauce starters" since they have the main components you'd start with in most red sauces lol
Simple for the Garlic, Onions and tomatoes sauce = G.O.T sauce. It is a basic tomatoe sauce that will be used in a lot of recipes so if you HAVE IT then you have GOT sauce. Lol
