I bought half a pig a few years ago and rendered the lard, then pressure canned it. I have a meat grinder attachment for my Kitchenaid, so I cut the lard into chunks while frozen and then ground them. I rendered it down in the crock pot and then I pressure canned the lard for safer storage.
You can sometimes get the fat ground from the butcher or I imagine you can run it through a grinder yourself. I imagine you want it very cold/frozen, though.
If you want extra use out of the paper towel you use to wipe your pot hold onto it for a day or two and use it to grease pans
I like to cook/heat/mix something into my oily/saucy pots and pans like rice or potatoes or something. I heated rice in a steak pan recently and it was so good!

Excellent demonstration on rendering, never done tallow but plenty of leaf fat for lard, for baking, and the best molasses cookies you ever ate. I do it the exact same way but put in mason jars in the freezer and fridge. Hate cutting the stuff up, my local meat processor with cut them into smaller chunks for me and sells me 10 pounds for like $7 dollars, all is frozen, so I use garden clippers to snip the small pieces into a roasting pan. No one here wants the fat when they butcher, good for me. I keep straining it off just like you did. Nice demo.
You Go Girl!! I'm 64, from the city my entire life. Recently moved to Idaho & am embracing the 'buy direct' mentality. I, too, believe we should respect the animals that give their lives for us. Thanks for the video. Now I know 'how' to render the tallow in my freezer!
The cracklings would be great to add to your dog treats! And the dogs will love them even more than the chickens! Also, the greasy paper towels make great fire starters.

My husband has recently be dx with excema. What do you use for it? His rx cream is NOT working!!!!!

Thank you so much for sharing. I was shocked to hear that this part of the animal is not used in our area and is wasted! I agree if you eat animal products you must not waste any! I have just recently started making my own tallow and it is so dreamy to cook with! Everything tastes amazing and it is full of nutrients. Let's spread the word!
No farmer or butcher tosses any part of an animal. They have buyers for any part you leave behind. That includes head, hide and organs. I usually advocate for less equipment but you should consider a small hand crank meat grinder. We usually rendered outside but then we rendered the fat from a whole hog at once. You could also do this on the wood stove in a cast iron pot.
I render beef tallow for my shampoo bars, face cream, lotion bars and cooking. We use the crockpot with couple of tablespoons of god salt and several cups of water. The salt takes the impurities out of the fat and the water prevents it from burning. I used to not do the salt and water and my house stunk. Now that I use the salt and water there is hardly any smell. I do this process twice to get a clean white tallow that doesn’t smell.
I've been a vegetarian for years, but I'm reading nourishing traditions and I am slowly bringing meat back to my diet, but its a big mind shift, and I so appreciate you using the entire animal. I think that would make feel so much better about eating meat. Love your videos!!
