  1. Most of the nutrition of tomatoes are in the peels and the rest is in the seeds… use both as much as possible… Vitamix can deal with both seeds and skins… insanity is peeling the tomatoes, drying the skins and turning them into a powder and then using them to “thicken your sauces”…

  2. You can put the tomatoes in plastic totes, with towels under them to absorb sweating. As they thaw the water comes to the top, skim it off,, and thus will majorly lessen your cook time.

  3. Jeez! I'm lost. An old lady taught me to can tomatoes differently. Dip tomatoes in hot water then ice, peel and core then just smash up and put in jars with salt. Then ad hot ring and hot top. And water bath one hour. I'm thinking this is different because you cooked down first and only water bath 25 min. Got that! But lost on why the lemon juice and why no hot lid and rings? I'm new to this canning stuff.

  4. I have had a garden for a couple of years. This year I had a huge harvest of tomatoes. More than my husband and I can eat, But I was told to not give them away. It was brought to my attention that I could have a year where my tomatoes may do bad and then I will be thankful for having a year where I had an abundance. I am not experienced, so don't know how often this happens. I did find that the extra allowed me to try new recipes, like ketchup, enchilada sauce and pizza sauce.

  5. no it look a lot of tomates but I would like I do I plant my 2 best kind of tomatoes I do roma and cherry now I could a steak tomatoes but my aunt plant those and I make sause and salsa and the chreey one I use for salad and for taco salad , and can make whole tomatoes can and spaghetti sauce and pizza sauce and then i also grow some for tomato juice also i don't know why people don't like drink good tomatoes juice its good for ya

  6. I just canned my first batch following your instructions and I think I have done something wrong. It is now full of bubbles after taking the jars out of the canner and it looks weird at the base of the jars. Can someone please tell me if I'm doing something wrong please.
