  1. The chicken looks amazing ! I made a similar one Saturday night with a spinach/artichoke /cream cheese style dip it is amazing too. I did not brown mine first I need to try that next time .

  2. I am permanently amazed at your energy! Then you mention you used to work 2 jobs (as well as the garden back then too). Wow. I am SO with you on using up what you have that needs used up, I feel bad because I struggled yesterday to get through my chores before and after work, and ended up using a bought in jar of Letscho (tomato and bell pepper vinegar sauce with the peppers left sliced) in my dinner instead of using the last of my tomatoes and peppers that I have in the fridge. Maybe next year I'll make my own and can it like you do with salsa! Thanks for taking us along with you today.

  3. Becky, empty the skillet put a cup of water in the skillet, bring to a boil and turn the heat off. Let cool and you can wipe your skillet out no scrubbing needed. I love my cask iron and never worry about it. Good luck!

  4. Keep those doors locked always . You are now famous can’t be too careful. You didn’t completely close your garage door when you returned from putting your herbs in the freeze dryer

  5. Looks amazing, just a tip, I worked in FMCG, oil specialist and olive oil is the best oil to eat, but not if it's heated up. A heart healthy Canola oil is much better for cooking. The chemical composition of olive oil changes when its heated up to a high temperature like for cooking.

  6. Don't know if you are aware but the okay hand sign you use a lot also has another meaning which is sinister – three 6's. I wouldn't use it and I don't because of the other meaning.

  7. You can get really creative with folded napkins.. they have some nice tutorials on Pinterest.. I do my own version of cordon blu..
    •chicken breast
    •thin sliced ham
    •cheese
    •pesto
    •sliced tomato
    •thin slides bacon
    •What ever spices I have
    to season the chicken.
    I normally pound the chicken breast.. season the chicken.. place in thin sliced ham… cheese… pesto.. tomato..
    Roll up the chicken if pounding… then wrap in bacon.. bake.. sometime I add cheese on top when the chicken is nearly done. Sometimes the chicken breast is huge after stuffing.. depending on the size of the chicken breast.. one stuffed chicken breast will feed two people.. I will have to try slicing the breast.. occasionally I will use stove top stuffing to stuff the chicken..
    I also wrap porkchops in think bacon..

Becky stuffed zucchini is an excellent way to use them up, try minced meat and rice with what ever else you have to use up, add some tomato based sauce to bring it together and a layer on the pan to cook it on. The inside of the zucchini is just thrown into the stuffing too, then if you have any left stuff some capsicum (peppers) then roast later.

  9. Keep the coat Becky – it looks nice on you and will be fine after the baby comes too. You can always either wear it open if it gets a little snug or use a coat extender insert.

  10. Here's a tip for you on your sweet potatoes and your yams I like to put mine in the oven and I cook him like a baked potato when they're done baking in the oven I cut them in half and scoop out all of the inside and mash them up and there you go you've got sweet potato or yam mash.

  11. <3 all you do. Keep the coat, you might not wear it for 2 weeks, but you'll wear it for years. Good eye on the table decor! Those chargers are a must-keep because they can "be": summer hay and wheat, fall corn/harvest, spring baskets, etc. Just add a little burlap to your runner or tapers to tie in the color! Those chicken breasts look AMAZING! Our old neighborhood store had jambalaya-stuffed, étouffée-stuffed, broccoli-cheese-stuffed. The creole/cajun market/deli was even called Stuffed! 🙂 I'd add: taco stuffed, alfredo stuffed, curried-lentil stuffed, fried-rice stuffed, mushroom & mashed-turnip-with-gravy stuffed, "pot pie" stuffed, meatball stuffed, pizza stuffed, barbacoa stuffed, carbonara stuffed, herbed-rice stuffed, pesto-pasta stuffed, BBQ stuffed, primavera-spaghetti stuffed, ….ooooh the possibilities are endless!! And OMG please do all of it with pork chops! <3 you!!!

  12. Becky, could you do something with pork chops? I have a whole pig in my freezer for my family and I have not cooked or eaten pork before so I don't know what I'm doing. I'm not going to eat it now either, but I want to make it tasty for my family. I also have a steer and a half in my freezer. It would be a great help should you decide to do a video on pork. Thanks.
