  1. You can get a lot of good seeds of eBay. A lot of the smaller ones are just sellers that sell from there own growing stock. It’s also a good idea to keep a stash of seeds from your stock I use a few pots from my stock in the summer and plant them near the end of the season so it lasts till December. Be wary tho you do get sellers sellling mouldy items or crappy ones but your covered by PayPal for 3 months

  2. "Not bitter", mate you should try the eggplants from Bengal state in India or from Bangladesh. They positively sweet.
    The recipe is to cover them in a light coat of salt and turmeric and then deep fry them. Absolutely fantastic

  3. In my experience harvesting them before they get to big makes a difference in bitterness. Of course each variety and growing conditions will change what size it is that you want to harvest them at, but if you find them bitter, try harvesting sooner.

  4. Here in South Carolina that's what we grow all the time. Next time you cook them though – try this – slice them *thin*, sprinkle with salt and let them sit for half an hour or so to draw out the bitterness and extra water, then dip them in seasoned flour and fry til they're crispy. You won't regret it 🙂

  5. Phoenix, Arizona here. Planted seeds directly under our stones for the heck of it. Hubby put a drip tube on it. I forgot about it, and the whole thing grew massive. Harvested and ate our purple babies, then decided to yank out the plant to make room for a shed. Took too long on the shed project, and guess what? Eggplant came back, even more massive than before, and many more fruits, too.

  6. I peel them with a carrot peeler and cut them into 1.5" pieces, then deep fry them, drain, and add to pasta along with roasted red peppers, roasted onion, garlic and artichokes.

    Also peel and slice them, salt and press….then rinse and dry. Cover in flour, egg, breadcrumbs and fry. Sprinkle with Penzey's pizza seasonings. Serve with marinara. Kids love it, too.

  7. The neighbors and I had in my old neighborhood, had a big garden and one year they planted like six or seven eggplant plants. Not more than 10 but the weather was so good for egg plants at your that every three days they would bring arm falls of eggplant out to the street with a sign that said “free” and sign that said “take me”.
    I have five eggplant. Grandma likes them for her recipes and dishes and stuff and I think that’s enough right there.
